“Bistecca” tomato is a variety selected by some Tuscan horticulturists, in particular, the Valdesani; they cultivate it from its own seeds obtained from the largest and most mature tomatoes. It’s a real treat for the palate and it owes the name “steak” (“bistecca”) to its enormous size, larger than a hand. It looks roundish, getting wider as it ripens, and easily reaching 1.3 pounds; it has a compact skin that can be easily peeled, as well as a thick, firm, and fragrant pulp. The latter looks dark red when the tomato is ripe, it’s very tasty, with little juice and few seeds.
