Pantelleria Capers

This extraordinary Sicilian island offers a wonderful treasure: a bud painstakingly picked by hand, with a great taste.
Even in the most hostile environments, nature can create something magical, as on the small and remote island of Pantelleria, which features a dry territory, but an undisputed gastronomic wealth. Antonio Bonomo and Girolamo Giglio already knew about it in 1949, when began processing high-quality capers. Their company, called “La Nicchia” and now led by Gabriele Lasagni, has always profited from its founders’ foresight and dedication.
Hand harvesting is hard work for sure: capers are collected one at a time, sorted according to their size and eventually dried with salt. The latter process results in the crunchiness that makes them ideal for a quick snack or in many recipes. The smallest capers, still delicious, are usually preserved in olive oil.
