Cavit – Cantina Viticoltori del Trentino, is a consortium of cooperatives, the largest in Trentino; it’s actually a complex and articulated facility born in 1950, which encompasses 11 private wineries, with 4.500 active members. It is based in Ravina, a few miles from Trento.

Giacinto Giacomini, the founder of the company who always strongly believed in the local terroir, managed to transfer his know-how, high professionality and thorough respect for the surrounding environment and the winemaking traditions to all the members of this cooperative.
Thanks to years-long research, the best areas for vine cultivation have been painstakingly selected throughout the local province, eventually creating the “Masi” wine collection.

The term “Maso” comes from the Latin “mansum”, and in the Trentino Region, it refers to the original nucleus of a farm, with over two thousand years of history. Among the most particular vineyards of Cavit, the most important is “Maso Torresella”, located in Valle dei Laghi: it’s an ancient and spectacular villa surrounded by vineyards, which is currently used as the company’s headquarters. It is located on the very shores of Lake Toblino, where the climate is mild and sometimes Mediterranean-like: right there, Chardonnay vine grows exceptionally well.

On the other hand, “Maso Cervara” can be found on Piana Rotaliana, in Mezzolombardo. The grapes cultivated there include the “teroldego” variety, also known as “rotaliano”: a native grape which gives life to a deep-red wine, quite delicate, with a little tannin content, and peculiarly long-lived.

In “Volano in Vallagarina”, there is “Maso Romani”, one of the areas chosen for the cultivation of “Marzemino”, the traditional native wine of Trentino.

In Trentino, sustainability and protection of the territory is a truly vital part of the local history and tradition; Cavit has fully embraced this very “philosophy”, always committed to excellence through thorough respect for the environment and its natural resources. In the course of the years, Cavit has implemented the following production standards: the BRC, IFS, and UNI EN ISO (Food Safety and Quality Standards) and the “Protocol for quality wine production of wine” (for sustainable agriculture). The company has also joined the PICA project in 2010, actively working with consulting companies and research centers in Trentino, such as the Edmund Mach Foundation.
The latter partnership has allowed an “avant-garde” group of agronomists and oenologists to thoroughly monitor and care for each company’s vineyards.
Cavit is currently investing a lot of resources in the identification of the ideal grape varieties, based on the technical-environmental parameters of its territory.

The winemaking company is also committed to reducing CO2 emissions, energy and water consumption; in particular, it is developing a technological solution to rationalize the water needs of the crops, seriously taking into account the specific needs of the territory and the local climate. Industrial waste has been already reduced to minimum quantities.
