Lake Beans

Known since the time of the Etruscans, “Lake Bean” is typical of the Trasimeno Lake area, where the presence of humid soils has favoured its cultivation. It represents a variety of the Vigna unguicolata species, known by the common name of “black-eyed pea” – native to Africa and introduced in Europe many centuries ago.
The bean seed is as small as a grain of rice, cream coloured and elongated, with a much higher soluble fibre content than other types of beans.
