Raspberry Honey

Raspberry honey ( Rubus idaeus ) is a special type of honey, very difficult to produce. It is found mainly in the mountain areas, at altitudes between 2.624 and 3.937 ft, in the Alps, and along the northern Apennines. It has a medium fruity flavour, very light colour and a tendency to crystallize very quickly.
Beekeepers tend to use the “nomadic” technique, moving the hives from one place to another, according to the presence of nectar plants: such technique allows the production of single-flower honey, allowing a more refined final product.
