Included in the list of traditional Italian food products, the almond milk has a very ancient history. Its production dates back to the Middle Ages when it was prepared and served in several monasteries during the Lent fasting.

Almonds are peeled in boiling water, chopped and added with sucrose. In Puglia, the excellent local almonds are obviously used in this preparation. The resulting drink is bottled and kept at room temperature, until consumption.
It tastes sweet and fresh, while it can be used to soothe the cough and take medicines.
