“Visciola” cherries are a wild species of Prunus cerasus used in several recipes around Italy, but in particular in the area of Cantiano. Along the ancient Via Flaminia, for instance, it is used to produce jams, fruit preserves and other sour cherry treats.
At the beginning of the XX century, two entrepreneurs put Amarena from Cantiano into production, offering sour cherries preserved in sugary syrup: this simple, but delicious product became so successful that it was soon appreciated all over Italy as a symbol of gastronomic refinement – those two producers were also selected as the official suppliers of the Royal House of Savoy.
Since 1999, the local Municipality has taken steps to restart the production of Cantiano sour cherries, now registered in the official list of traditional agri-food products of the Marche Region
