Moscato Passito from Valle Bagnario di Strevi is a “meditation” wine of ancient tradition, produced for over a century in the ancient vineyards of Strevi, in the province of Alessandria – the very vineyards already appreciated famous for their peculiar, elegant and aromatic grapes.
Strevi is located in Bagnario Valley, ironically called the “valley of the sheiks”, because the local winemakers who owned the vineyards used to be the wealthiest people in the whole area.
To obtain this Passito, only the healthiest and most sparse bunches are selected and placed on the racks to dry for at least 30/40 days, either directly in the sun or in an indoor fruit cellar. It’s a natural process which always takes its own sweet time, without any artificial booster.
In November, the grapes are eventually pressed and start to ferment with part of their skins, thoroughly cleaned. The wine is actually put on sale no sooner than two years after the harvest.
In 2005, the Controlled Designation of Origin was recognized as “Strevi D.O.C. Passito”.
