Rosehip berry jam

The production of wild rose jam takes place mainly in the Montefeltro area, in the province of Pesaro and Urbino; spontaneous and fruits of Rosa canina (rosehip) are collected in large numbers from branchy shrubs which belong to the Rosaceae family.
Rose hips are harvested after the first winter frost, carefully cleaned and emptied of internal hair and seeds. The jam, sweetened with honey, looks like red-grape mash with orange-golden reflections. It is very rich in vitamin C.
