San Biase Long Potato

The long potato of San Biase has a peculiar elongated shape and yellowish or purplish skin, with a cream-white paste inside. The farmers of San Biase have been cultivating it for a long time, both for personal consumption and for sale.

It is said that this species was originally brought here by French soldiers sent to Trivento to quell a rebellion; while they were en route, they set camp in San Biase and began cooking these very potatoes: some local youngsters watched them quite amazed by the sight. They were eventually given some raw tubers to be sown locally. From that very day on, the San Biase potatoes have been constantly cultivated, benefiting from the cool climate and the ideal soil.

Cultivation is still based on traditional techniques; even after the harvest, when drying in the sun, the tubers are not treated with any type of chemical product.
