White Asparagus of Bassano PDO

In Veneto, there are four types of white asparagus: from Sile, from Bibione, from Cimadolmo (PGI – Protected Geographical Indication), and from Bassano PDO. The latter is the most valuable: its shoots are well-formed and straight, white in colour, between 7 and 9 inch-long and with a minimum central diameter of 0.43 inches. Some cross cracks are allowed as an element of value and identification of this very variety: they’re due to its low fibrousness.

Bassano asparagus has also a very particular bitter-sweet taste. They are normally sold in bundles of 2.2 pounds or 3.3 pounds. Their production is supervised by the Consortium for the Protection of White Asparagus of Bassano del Grappa PDO (protected denomination of origin).
