Lemon and Orange Candies

Produced in Rodi Garganico (province of Foggia), with traditional recipes handed down from generation to generation, these lemon and orange candies have an elongated shape, about 1.18/2-inch long, with a thickness of 0.19 inches. Their colour is quite obviously yellow or orange.
The preparation of these candies takes place from November to March: it is a very long process. First of all, lemon and orange peels are cut into strips placed in constantly refreshed water for four days. Then, the skins are cooked in a pan, with the addition of sugar, for about 20 minutes; they’re eventually dried and packaged for sale.
