Fregola, also called “fregula” or “pistizone”, is a typical Sardinian pasta, produced in the area of Cagliari, Oristano, and Campidano. It is dry and similar to Couscous, but made with durum wheat semolina worked by hand, to obtain small irregular and rustic dumplings with a unique taste, also thanks to natural drying and roasting.
Its name comes from the Latin “fricare” (“to rub”), referring to the very rubbing of the semolina between the hands to make small dumplings.
Fregola is a vital part of the ancient Sardinian traditions and it is still prepared at home, then cooked according to many typical recipes: in particular, it is often served with clams.
Fregola is almost impossible to find in the rest of Italy but in some large shopping centres or particular establishments which offer typical national products.
