In Sardinia, there are different varieties of honey including “Asfodelo”: this variety looks almost transparent and colourless, while it’s produced between March and April; it is obtained from Asphodel flowers, a spontaneous herbaceous species usually found in uncultivated land and pastures – it blooms in the spring.

The flavour of this type of honey is sweet and comes with a delicate fragrance; it should be enjoyed without combining it with any other flavours. Its aroma is not very persistent and slightly acid, while this honey finely crystallize.
