Crumb of St. Joseph

The crumb (“Mollica”) of San Giuseppe is a traditional Molise product. The name refers to the feast of March 19, particularly popular in these areas, which celebrates the locals’ true devotion to that saint.
To prepare St. Joseph’s crumb, the following ingredients are needed: stale durum wheat bread, walnuts, almonds, toasted and chopped hazelnuts, pine nuts, raisins, fine salt, nutmeg, ground pepper, cinnamon, cloves, chopped parsley, garlic, leaves laurel, and chopped orange peel. All the ingredients are mixed, left to rest for a few hours, then fried in a dough with plenty of extra virgin olive oil. Cooking, possibly on a wood fire, must not be too long so as not to harden the crumb which must retain some softness.
This dish can also be enjoyed with tomatoes or used as a condiment for pasta.
