Dried Tomatoes in Oil

Dried tomatoes in oil are a typical product of central and southern Italy, including Molise.
The tomatoes are harvested, washed, cut in half, left to dry in the sun on reeds and then simply stored in a glass jar with olive oil.
Drying is the most delicate part of the process and requires the tomatoes to be covered with gauze to protect them from midges. Sliced, dried tomatoes can thus be preserved in jars or simply flavoured with bay leaf and basil, oregano, garlic, parsley, fennel seeds, thyme or chilli.
These tomatoes can be eaten as a side dish, on bruschetta bread or used to prepare sauces.
