Macerata Thistle

The Macerata thistle (Cynara cardunculus attilis) is nicknamed the “vegetable giant” because the plant can weigh from 17 to 22 pounds.
It prefers deep ploughed soils, fresh and rich in organic substances. Once collected, it is freed from filaments, cut into pieces and thoroughly washed. It appears on the market in the middle of the winter, from December to February; it is usually enjoyed at Christmas and is part of the already rich Christmas’ Eve in these parts of Italy. Alternatively, it is boiled and used in many recipes, all traditional and very simple, served pan-fried, stewed, or fried with lard.
