Panella is a tasty dessert typical of Ligurian cuisine, very simple and quick to prepare. It’s similar to a chestnut pie, as it’s made with chestnut flour. Nourishing and tasty, it used to be enjoyed as the main course by the farmers, combined with other types of food to get the right amount of fat as well – this dish is totally free of it.
Since chestnuts are available in big quantities, in some parts of the region Panella would replace bread.
It is usually presented in a thin round shape, chestnut brown in color – the latter can slightly change depending on different cooking times. Its ingredients are sifted chestnut flour, water, salt, and oil; the resulting creamy dough is spread on a cutting board and sprinkled with water before cooking.
Today, corn flour can be used as well.
