Red radicchio of Treviso PGI

Radicchio Rosso di Treviso IGP (PGI – Protected Geographical Indication) is a variety of chicory (Cichorium intybus) with an intense dark red colour, with white streaks, crunchy texture and an unmistakable delicately bitter taste.
It comes in two variants: early and late. The Radicchio Rosso Precoce (“Early”) has a big, elongated, well-closed heads, with deep red leaves featuring white strikes. When compared to the late one, it is less valuable, as its tufts weight at least 5.30 oz and are about 7 – 9.9 inch-long.
The Late Red Radicchio has regular shoots and is more valuable because it is more difficult to produce: harvesting in the open fields can begin only after the plants have undergone two touches of frost and the clumps have reached a minimum weight of 3.52 oz and length of 5.90 – 9.80 inches.
