Sperlonga White Celery

The Celery of Sperlonga (Apium graveolens – “Bianco di Spelonga” ecotype) it has been mainly produced since the 1960s, in the province of Latina, where the mild climate, the soil of alluvial origins, and the limestone give it highly appreciated organoleptic features.
Known as Selinon in ancient Greece, it was mainly used for its medicinal properties.
It comes with an elongated shape, with little prominent ribs. White in color, with a slight light green shade, it is commonly used in many recipes, according to its sweet and slightly aromatic flavor.
Compared to normal celery, it has less fibrousness and greater softness. It is harvested strictly by hand, cutting the plant with knives. Protected geographical indication (PGI) – regulating cultivation and production within this area – has been granted to this product.
